Joseph St-Onge was known for his carvings of farm life and the equipment used in rural farming in Gaspe, Quebec. A very fine wood carver; he has been collected by the Gaspe Museum and by collectors around Quebec. He was known to dress the people driving his horse-drawn farm equipment in sewn fabric costume. A team and driver pulling a farm wagon can be seen in the collection of the Gaspe Museum.
